INGREDIENTS<\/strong><\/p>\n3 cups water<\/p>\n
3\/4 cup grits<\/p>\n
1 teaspoon chicken bouillon<\/p>\n
2 dashes ground black pepper<\/p>\n
2 dashes dry thyme<\/p>\n
2 teaspoons fresh minced garlic<\/p>\n
1\/2 cup shredded parmesan cheese<\/p>\n
1 teaspoon butter<\/p>\n
A few pieces of shrimp<\/p>\n
More olive oil (2 tablespoons)<\/p>\n
Fresh basil\u2026about 5 leaves and then more for decoration<\/p>\n

METHOD<\/strong><\/p>\nBring water to boil.<\/p>\n
Blanche shrimp in the water and take it out. This means put the shrimp in, wait a few minutes like 3 and take it out.<\/p>\n
Keep the water.<\/p>\n
Bring water to a boil and add chicken bouillon, pepper, thyme, and garlic.<\/p>\n
Add in grits and reduce to simmer. Let simmer 13 minutes or until grits have absorbed all the water. *Skip to making basil olive oil.<\/p>\n
Mix in parmesan cheese and let rest for a few minutes.<\/p>\n
Making Basil Olive Oil<\/h2>\n
In a mortar and pestle, add the basil leaves and start mashing. Add a sprinkle of salt to help. Then add about 2 tablespoons of olive oil. Keep mashing. By the time this is done, the grits should be about ready. Taste it…it might need more salt.<\/p>\n
TIPS<\/strong><\/p>\nAssemble like you\u2019re a fancy chef. Grits, basil olive oil, shrimp, and basil leaf.<\/p>\n
Torch the shrimp to add a few char marks. It also brings out some flavor.<\/p>\n
