I’ve done the 500 degrees, turn it off, and place the roast in the oven and do not open until 6 hours later. I’ve done the 450 degrees for 15 minutes and then drop down to 325 for 3 hours. One of my favorite ways is to probe the meat with my thermometer and set the oven to 325 and wait until the internal temperature reached 135 and pull it out. Now that I think about it, one of my other favorites was keep the oven at 200 degrees and take it out when the internal temp hits 145.<\/p>\n
Now how did the roasts turn out with all of these methods? Excellent. Yes, even the 500 degrees and then turn off the oven method. If I had to choose one of these methods, I’d go with the probe and take out when the internal temp reaches 135.<\/p>\n
I’m not sure how many roasts I did since Halloween but it seemed like a lot and I felt like I could experiment a little on execution. I searched the web for an app to time my roast and out of all the ones that came up, I chose, Roast Perfect by Certified Angus Beef, LLC. This app has many options. The option I do like but didn’t use was the select a roast part where the app will help you pick out a roast based on the type of meat you want to buy and how many people you’ll need to feed. Then there are recipes on how to prepare your choice followed by a roast timer. The roast timer calculates based on the total number of pounds and the type of roast. Oh, and the degree of doneness.<\/p>\n
The app will tell you to sear at 450 degrees for 15 minutes, then drop your oven temp to 325, and finally tell you to take it out and tent it with foil for an additional 15 minutes. How does it come out? Excellent. It’s pretty fool proof but I do have recommendations if you’re going to try out this app.<\/p>\n
