{"id":869,"date":"2009-07-11T17:40:01","date_gmt":"2009-07-12T00:40:01","guid":{"rendered":"https:\/\/edelalon.com\/blog\/?p=869"},"modified":"2024-11-15T10:37:23","modified_gmt":"2024-11-15T18:37:23","slug":"corn-chowder-recipe","status":"publish","type":"post","link":"https:\/\/www.edelalon.com\/blog\/2009\/07\/corn-chowder-recipe\/","title":{"rendered":"Corn Chowder Recipe"},"content":{"rendered":"<p>Corn chowder is one of my favorite recipes on a cold day.\u00a0 Actually, I like it on hot days too.\u00a0 One of the cool things about this dish is the ease of making it.<\/p>\n<p><strong>Portions<br \/>\n<\/strong>100<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n2 pounds of bacon, chopped<br \/>\n8 oz of celery, chopped<br \/>\n1 pound onion, chopped<br \/>\n8 oz peppers, sweet, chopped<br \/>\n2 gallons stock<br \/>\n2 pounds potatoes<br \/>\n2 tsp black pepper<br \/>\n6 tbsp salt<strong><br \/>\n<\/strong><em>13 pounds 2 oz corn, cut corn<\/em><strong><br \/>\n<\/strong>1 gallon milk<br \/>\n1\/4 gallon heavy cream<br \/>\n1 pound butter<\/p>\n<p><strong>Method<br \/>\n<\/strong><\/p>\n<ol>\n<li>Cook bacon until crip.<\/li>\n<li>Add vegetables; cook 7 minutes, stirring occasionally.<\/li>\n<li>Add stock, potatoes, and seasonings.\u00a0 Bring to a boil, reduce heat; simmer 15 minutes or until vegetables are tender.<\/li>\n<li>Add corn.\u00a0 Bring to a boil, cook 5 minutes, stirring occasionally.<\/li>\n<li>In a separate pot, slightly boil milk and butter.<\/li>\n<li>Add milk slowly to the soup.\u00a0 Heat to serving temperature.<\/li>\n<\/ol>\n<p><strong>Notes<\/strong>: You need a big pot.\u00a0 You&#8217;ll need to big pots for all my 100 portion recipes.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Corn chowder is one of my favorite recipes on a cold day.\u00a0 Actually, I like it on hot days too.\u00a0 One of the cool things about this dish is the ease of making it.
