{"id":92,"date":"2009-04-29T20:34:48","date_gmt":"2009-04-30T03:34:48","guid":{"rendered":"https:\/\/edelalon.com\/blog\/?p=92"},"modified":"2024-11-25T19:41:44","modified_gmt":"2024-11-26T03:41:44","slug":"baked-macaroni-and-cheese","status":"publish","type":"post","link":"https:\/\/www.edelalon.com\/blog\/2009\/04\/baked-macaroni-and-cheese\/","title":{"rendered":"Baked Macaroni and Cheese"},"content":{"rendered":"<p>I tried out a recipe along time ago for baked macaroni and cheese but for some reason people didn&#8217;t eat it.\u00a0 I researched a couple more recipes but none of them were appealing.\u00a0 I came across a recipe on the back of the elbow noodle bag that went something like this:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>32 oz elbow macaroni<br \/>\n1\/2 cup butter<br \/>\n3 tablespoons flour<br \/>\n4 cups milk<br \/>\n1\/2 cup yellow onion, finely diced<br \/>\n12 ounces sharp cheddar, shredded<br \/>\n1 teaspoon kosher salt<br \/>\nFresh black pepper<\/p>\n<p>Boil noodles.\u00a0 Saute onions in butter, add flour, add milk.\u00a0 When thickened, add everything else.<\/p>\n<p>I recently watched Good Eats where they featured Macaroni and Cheese and I learned that what needs to happen is to create a cheesy roux.\u00a0 There are different levels of roux and they are classified by their color.\u00a0 For this case, we want to keep a white roux (don&#8217;t keep it on the stove too long).<\/p>\n<p>The Good Eats version is on <a href=\"http:\/\/FoodTv.com\" target=\"_blank\" rel=\"noopener\">FoodTv.com<\/a>.\u00a0 I&#8217;ve created a version built off of that one.\u00a0 Here it is:<\/p>\n<p style=\"text-align: center;\"><strong>\u00a0<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>32 ounces elbow macaroni<br \/>\n1 stick of butter<br \/>\n3 tablespoons flour<br \/>\n1 tablespoon mustard<br \/>\n3 cups milk<br \/>\n1\/2 cup yellow onion, finely diced<br \/>\n2 large egg<br \/>\n8 ounces Kraft Mexican Blend Cheese, shredded<br \/>\n4 ounces Baby Belle Soft Cheddar Cheese, shredded<br \/>\n1 teaspoon kosher salt<br \/>\nFresh black pepper<br \/>\n1 cup seasoned panko bread crumbs<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Preheat oven to 350 degrees F.<\/p>\n<p>In a large pot of boiling, salted water cook the pasta to al dente.<\/p>\n<p>While the pasta is cooking, in a separate pot, melt the butter. Saute the onions.\u00a0 Once the onions are browned, whisk in the flour.\u00a0 After cooking flour for about 5 minutes (until you make a white sauce roux), stir in the milk.<\/p>\n<p>Temper in the eggs. Stir in 3\/4 of the cheese. Season with salt and pepper. Once the sauce has thickened, fold the macaroni into the mix and pour into a 2-quart casserole dish.
