Kufta Kebab Recipe

Here’s simple dish for those who have ground lamb. Kufta is a dish found in many Israeli menus. Normal kebobs use small cuts of meat but when you use ground lamb, it changes to kufta. What I enjoy about this style is that the pieces fit well in pitas. Yes, I know, pita is not food. For the American palette we’ll just say that pita is food and is really great with kufta, cucumbers, tomatoes, tahini, eggplant, and hummus.

Kufta Kebob Recipe

Ingredients

2 pounds ground lamb

1/3 cup fresh chopped parsley

1 medium diced onion

1 teaspoon salt

1 teaspoon pepper

1 teaspoon cumin

4 teaspoons minced garlic

Method

Soak your wooden skewers overnight in water. If using metal, you can start right away.

Combine all the ingredients and put in refrigerator for at least 2 hours.

Grab your skewer and a handful of mixture.

Wrap the mix around the skewer. It should look like a hotdog on a stick.

Grill for about 3 minutes each side.

Serve with pita, cucumbers, tomatoes, hummus, eggplant, etc…
