How to Tell a Good Egg

Since shelter in place, the refrigerator has turned into a short-order cooks dreamland. We finish about 5 dozen eggs in about 2 weeks. No, not all scrambled or fried but they are also used for baking.

Out of 1,000 eggs, I’ll run into a bad egg. One way to tell if your egg is bad is to look at the yolk. When you crack the egg, the yolk should be round and firm.

Other Egg Tests

Place the egg in a bowl of water. If it sinks and lays flat, it is still good. If it sinks and stands up, it’s bad. Standing up means it has air inside. If the egg floats, toss it. Don’t even open it.
