Branzino is a mild white fish from the Mediterranean and it is easy to prepare. It becomes even easier if you ask your fishmonger to gut and clean the fish. Once you do that, here are the steps:

  1. Season the inside with salt and pepper.
  2. Stuff with fresh thyme and butter.
  3. Heat a pan that will fit the fish on high heat.
  4. Add 4 tablespoons of olive oil and place the fish in the pan.
  5. Reduce heat to medium-high.
  6. Cook for 4 minutes.
  7. Turn over.
  8. Bring heat up to high for 1 minute.
  9. Drop heat to medium-high.
  10. Cook for 3 minutes.
  11. Remove from heat and serve with lemon.
