Cooking $99/pound Wagyu Steak

Some of you have seen Wagyu beef sold at Costco. You get excited for a second until you see the price; $99 a pound. Then you walk around the store as you think if you are getting a significant amount back in reward points. At this point, I decided to grab two steaks. Picking the steaks took about 10 minutes. The decision on the final selection was about which pieces contained a good level of fat but not too much. There were many pieces that looked like a solid piece of fat.

To give this $99 piece of meat the respect it deserves, I put it in the fridge to properly defrost as I thought of a gameplan on how to cook it. 

I concluded that I wanted some kind of fried rice along with some greens and maybe mushrooms. 

The fried rice is pretty standard. The Wagyu is today’s highlight. To cook the Wagyu I took the following steps:

  1. Take the wagyu out of the fridge about 5 minutes before cooking.
  2. Heat the skillet to high heat.
  3. Use some of the fat trimmings to oil the pan/skillet.
  4. Once some of the fat has rendered, place the steak on.
  5. Cook for 2.5 minutes.
  6. Season with salt and pepper.
  7. Flip.
  8. Cook for 2.5 minutes.
  9. Season with salt and pepper.
  10. Remove from heat.

This brought the meat to a nice medium-rare. Cutting was easy and eating was more of a delight. The meat did not melt in your mouth but it was pretty close. It had a sashimi fish texture.

Maybe I’ll try to sushi the next batch. Stay tuned.
