Chicken Cacciatore Recipe

Portions

Ingredients
1 bulb minced garlic
2 quarts slicked onions
3 cups sweet peppers
2 cups oil
2 1/4 gallons canned tomatoes
3/4 gallon water
5 bay leaves
2 1/4 tablespoons chili powder
2 teaspoons ground oregano
3 3/4 tablespoons salt
50 pounds of cut up chicken
1 quart shortening

Seasoned flour:
10 1/2 cups flour
2 tablespoons black pepper
3 3/4 tablespoons salt

Method

  1. Saute garlic, onions, and peppers in oil until tender.
  2. Add tomatoes, water, bay leaves, chili powder, oregano, and salt.  Simmer 1 1/2 hours.
  3. Wash chicken thoroughly under running water.  Drain well.
  4. Dredge chicken in seasoned flour.
  5. Brown chicken in batches in shortening.  Add to baking pans.  Pour 1 gallon sauce over chicken in each pan.
  6. Cover pans.  Bake for 1 hour or until chicken is tender.

Notes
You can add 6 cups of sliced mushrooms.

5 Essential Keys to Successful IT Projects

I was reading this article from HP on successful project management.   While there are more ways for successful project completion I think that they summed up the top 5 on my list of important factors for any project.

The first thing is to make a definite goal.  It’s the alpha and omega.  When you start anything (this goes for life too), you need to set up your expectation of what the project is going to look like in the end.  One of my favorite questions that I ask is, “What would you like to see at the end of the day/project?”

Having the right team is key but I think that having the right leader to figure out if the team is competent is better.  While the technical abilities of the team matter, the direction of the team matters more.  The article says to pick members for their skill and ability–This is good but building a team that can actually work together is harder.

Plan, plan, plan.  The projects that I’ve worked, on a good majority of time is spent on planning.  What happens without a plan?  Countless hours of collaboration are spent on follow ups and new direction.  What’s the difference between project scope and planning?  The scope will puts a boundary on what the project is supposed to look like in the end while the plan lays out how your are going to do it.  This is mainly for the team performing the work.

For me, out of this list, communication is #1.  We all communicate in different ways and sometimes different languages.  The article I wrote, “Managing Customer Expectations,” is not only for customers.  You want to do this with your team members and with people you interact with daily.

Learning new technology is good but not key for IT projects.  I think this is an exercise that the team members should go through.  From my experience, the only situation where this is handy is when your CEO walks up to you and says, “Did you hear about _____?  I just read about it in ‘CEO type magazine’.  We should implement it.”  Alarms go off and then I usually come back with some pros and cons about the product.  I’ve also been in a situation where I was caught off guard and had nothing to say–it was very awkward.

Chop, Dice, or Mince

I grew up in a kitchen where I started off as the prep cook also known as the guy who cuts everything.  You name it, I’ve prepped it–onions, garlic, carrots, celery, tomatoes, etc…

During the first years I had many questions.  Thanks mom and dad for being patience with my lack of kitchen skills.  The question I had as prep cook was, “How big do you want this chopped?”  My mom would start me off and show me an example and tell me to copy it.  My dad would stick up his pinky and say to make it the size of the tip of his pinky.

I plan on making it a little more simpler for my kids by showing them a ruler and explain to them the different sizes and styles.  Here’s the breakdown:

  • Chop – cut into pieces that range from 1/4 to 3/4 of an inch.
  • Dice – cut into pieces between 1/8 and 1/4 of an inch.
  • Mince – cut into pieces less than 1/16 of an inch.

Apple Butter Sugar Cinnamon Toast

One of my son’s favorite things to do instead of playing video games and watching TV is to make food.  He’ll come up with some strange concoctions.  There was one time he arranged left over hot dogs and Tostitos scoops to make little hors d’oeuvres.

On his next spell of boredom or was it that he was grounded from video games and TV, he made Apple Butter Cinnamon Sugar Toast.  It’s a simple snack but tastes really good.

Ingredients
Sliced bread
Apple butter
Ground cinnamon
Sugar

Method
Toast the bread.  Spread on apple butter.  Sprinkle sugar and cinnamon over.  Serve.

EPA Issues Order to Shell Guam Inc. to Continue Clean Up Work at Guam Facility

Action sets schedule for ongoing work to remove and prevent releases of hazardous waste

The U.S. Environmental Protection Agency has ordered Shell Guam Inc. to implement corrective actions and cleanup releases of hazardous waste at its facility located at Chalan Tenjo Vista, Piti, Guam. The order also directs the company to continue its work and activities necessary to clean up any spills and prevent any releases of hazardous waste or hazardous constituents to soil or groundwater.

“For many years now, Shell has voluntarily conducted cleanup of their facility with regulatory oversight from both the U.S. EPA and Guam EPA,” noted Jeff Scott, Director of the U.S. EPA’s Southwest Region Waste Management Division. “Currently, we are satisfied with Shell’s response activities at the site, but with the impending sale of the facility, it is time to formalize cleanup responsibilities to ensure that site work continues into the future.”

Monitoring stations have found that the groundwater underlying the facility is contaminated with petroleum, benzene, toluene, and other petroleum constituents and additives. While there are no drinking water supply wells in the nearby vicinity, groundwater generally flows to the ocean west of the site and can potentially impact the Tenjo River and Big Guatali River. Also, nearby wetlands and the Big Guatali River receive surface water discharges from the facility.

Specifically, the order requires Shell to:

  • submit a report summarizing the current conditions and historic operations of previous investigations and corrective actions, information for all known hazardous waste and hazardous constituents releases to the environment, and the physical setting and maps of the facility,
  • develop and implement a plan for investigation of the facility’s solid waste areas and other areas of concern to identify the nature and extent of any releases of hazardous waste or hazardous constituents,
  • submit a corrective measures study,
  • notify and respond to any identified immediate or potential new releases of hazardous wastes or hazardous constituents, and implement any response actions.

Dave Carroll

This is the reason why I hand carry my bass.  Poor Dave Carroll.  I know how he feels.  Actually every musician knows how he feels.

In fact, when I accidentally bumped my bass into a mic stand it hurt my feelings.  I’d hate to see someone tossing around my bass like it was a toy like they did with Dave’s guitar.

Do airlines still allow you to carry on your instruments?  How do you travel with your instrument?

Picky Eating Adults Support

I was watching “My Life in Food” on Food Network TV.  This episode covered picky eaters.  I knew they existed but I didn’t know to what extent.  I truly felt for these people because I can’t imagine a life without a variety of food.  Turns out there’s a support group for picky eaters.  Here’s a snippet from their website:

This is a very tall order. Let me list some of the things that I found that can cause an individual to become an Adult Picky Eater. There are probably many more.

  2. Swallowing Disorder
  3. Brain Function Disorder
  4. Food Aversions
  5. Taste and Smell Disorder
  6. Super Tasters
  7. Sensory Integration Disorder
  8. Some children use it to control parents
  9. Autism
  10. Tourettes Syndrome
  11. Neophobia
  12. Agenesis of the Corpus Callosum

Most professionals don’t consider Picky Eating to be a real Eating Disorder. That title is reserved for young people who starve themselves because they never think they are thin enough. Or the other big one is throwing up so you don’t gain weight. I grant you Anorexia and Bulimia are truly an eating disorder. Which leads me to my point about my picky eating.

I think the one common thread that I and those I have met with similar problems is that our brains don’t think of many foods as food. Generally, the more complex the food, the less likely any of us are to eat it. And that’s why it truly should be a recognized eating disorder.

The only meat I eat is Bacon. But it better not be thick and it should be very crisp. In fact, burnt is better than under cooked. If it’s pepper bacon I think of it as ugly looking dirt. Most of the others I have had contact with eat little or no meat. If I try to eat steak it feels like a piece of rubber in my mouth and with each chew I get closer and closer to a gag reflex than can lead to throwing up.

That’s why when some one asks “Here, try this you just might like it,” what they don’t realize is that I fear one taste or one chew is all it will take to make me gag and have a very violent contraction in my abdomen as I throw up my stomach contents all over their carpet. It can really get ugly when it happens.

Professionals need to have some way to identify children who are going to be Picky Eaters into adulthood unless some sort of drastic intervention is taken. I believe the following clues could be very helpful.

If the child is otherwise well adjusted in all other ways and has no other behavior problems. Professionals might want to look for what I think is the biggest clue. Is the child not eating something because it tastes bad, or does he not really see it as food. I think that will probably be the most common thread that most Picky Eating Adults will share that come to this web page.
